Today we are going to take my tried and tested ingredient no machine ice-cream and we are
going to make lots of flavors of dairy free coconut ice-cream.
Now this ice cream is not just for vegans, it is so delicious, it’s for everybody.
So lets get started.
This is a two ingredient no machine ice-cream so the main ingredient is coconut milk.
Now the coconut milk you can buy is full fate coconut milk.
You don’t want to buy low fat coconut milk because that does not work.
It does not have enough solids in it and coconut cream won’t work either.
So full fat coconut milk.
You put them in the fridge over night so they get really lovely and hard.
And then what we do, so now watch this this is a sneaky trick.
We take out cans and we turn them upside down.
Juts like that and then we take an opener.
This is a great trick when you try to separate water from solids.
You cut open the tin and then you see this.
What you have here is coconut water.
Now what you want to do is pour the coconut water away.
Now save the coconut water because it works really well in smoothies.
It is really dehydrating it takes delicious.
So what we have left you see this right here coconut solids.
This is exactly what we want.
Now this is going to be the base of our ice cream.
It’s like baking magic.
Now we are going to take these solids and put them into our stand mixer.
Now just another little tip about your coconut milk.
If you have her in the fridge overnight and it doesn’t go solid.
I recommend changing your brand of coconut milk because this can happen.
Okay so out coconut solids are in there.
You want to mix this up on a medium high speed until it is nice and fluffy there is no more
coconut solids.
Until it is nice and smooth.
So while out coconut solids are whipping up we are going to go ahead and get our coconut
condensed milk ready.
We have made this in a previous video it is really really easy to make.
It is just coconut milk and sugar cooked together to make a lovely coconut syrup.
This will be the liquid sugar that is in our ice cream and make it lovely and scoop-able.
So when the solids are nice and whipped that is when we are going to add this in.
So this is nicely whipped up now we are going to go ahead and pour in our condensed milk.
Now you want to make sure this is nice and cold because this will actually help our ice
cream and whip up better.
Okay so everything is in there we are going to turn it back onto a high speed and whip
up again until it is really lovely and thick.
so because we are making coconut ice cream i thought i would go a little bit tropical
with my top but as you can see outside it is a miserable day today in Santa Monica so
hopefully it will clear up later.
Perfect.
So it has been around three minutes and our mix has whipped unlovely and think.
The very last thing I am going to add into it is some.
Vanilla extract now the reason that I add in vanilla extract is because it contains
alcohol and it will actually stop your ice cream freezing really hard. and then just
turn on your machine again and whip that in.
Okidoki our ice cream is done now just look at this texture.
Do you see how nice and thick that is?
This is what your ice cream should look like.
Now if you have made my two ingredient no machine ice cream before you will notice that
that is really think.
This one is a little bit softer because of the fats and stuff our different.
But this is exactly what we are going for.
So our ice cream is pretty much a blank canvas we can add an amplitude of flavors to it.
And that is our next step.
So to make different flavors of ice cream it could not be easier.
Just think about when you go to a yogurt shop and you get your plain yogurt and then you
get all your mixings.
That is exactly what we are going to do.
So in a little bowl we are going to add in some of our coconut ice cream base.
So this first flavor we are making is Nutella Swirl.
So I have some lovely soft Nutella here that I put in the microwave.
For a few seconds to make it kind of jiggly and then I am just going to drizzle it over
the top of the ice-cream.
And take your spatula and then just very gently swirl these together creating these lovely
ripples of chocolate though the coconut ice cream.
You know after you taste coconut and chocolate together you don’t realize what a good pairing
they are it is just absolutely delicious.
so now it is time to put it into our ice cream container.
Now I use these ice cream containers they are really great.

Fill your tub all the way to the top with your delicious coconut ice cream.
Now if you don't have Nutella you can always use melted chocolate.
That will work really well too.
Okay lovely this is definitely a thing of beauty.
And i am just going to go ahead and finish up the top with some chopped hazelnuts.
Now of course the finishing touch is out homage stickers.

That guy is going to go straight on the front.
So this is my beautiful hazelnut Nutella swirl.
Now we can’t taste it until it is frozen so I am going to pop it into the freezer and
I am going to get started on another delicious flavor.
So we made out chocolate flavor but now we are going to move onto something a little
bit more fruity.
We are going to make strawberry and mint ice cream.
Just like before into our bowl we are going to add into our ice cream base.
So to get that lovely mint flavor I am going to add into that ice cream base homemade mint
extract which is a little bit to get a nice flavor.
And then for our strawberry you know how much I love pure fruit.
This is pure strawberries just mixed together in a food processor and you want to just blend
them until they are lovely and fine.
And this is what you get.
Gently mix all these ingredients together.
Look at the beautiful color I am going to sneak a little taste of this.
Oh yummy yummy yummy.
The coconut is absolutely delicious.
I am telling your there is not a sinner out there that won’t love this ice cream.
Okay so into our ice cream.
Okay into our container.
Just like before fill it all the way to the top with our delicious ice cream.
Just going to finish this guy off with a nice fresh strawberry in top.
And then of course my table.
This ice cream is called Minty Strawberry.
Oh just look how lovely this looks.
So your ice cream only takes around 4 hours until you are able to eat it and it will last
in your freezer for up to eight weeks.
So I am going to pop this guy into the freezer and we are going to get started on another
great flavor.
I am excited for this next flavor because it is something that I consume every day is
coffee ice cream.
Into the bowl with our ice cream base.
Now for out coffee flavor you want a small amount of liquid with the most amount of coffee.
So I like to resolve coffee granolas nice and strong only in a small bit of liquid so
you get really dense intense flavors.
I am just going to go ahead and pour that into my ice cream base.
you can also use coffee flavored syrups that would work really well too.
And then just like before mix it all together.
Now for those of you who love coffee deserts this is right up your alley.
I feel like with coffee deserts you either love them or you don’t, but I think everybody
should try this because it is absolutely delicious.
Okidoki this is looking good now into our container.
Just like before fill your container all the way to the top. for the top of the ice cream
I like to add on a few little coffee beans.
Just so you can tell what it is and make it nice and pretty.
Then of course lets not forget our ice cream sticker.
This ice cream is called coconut ice cream latte.
That is exactly what it tastes like beautiful.
Can’t wait to try this one.
Sticking with our fruity theme our next flavor is one of Kevin’s personal favorites.
It is banana ice cream.
Oh yeah!
Hahaha!
This is such a simple ice cream into our ice cream base we are going to add in some simple
mashed banana.
All that lovely flavor, sweetness, texture, delicious.
This is just a really a delicious ice cream.
And then just give it a mix in.
Look at all those bits of banana.
Yummy!
There you go it is that simple.
And then we are just going to bring in our tub and fill them up with our ice cream.
I really like this ice cream and you get the natural sweetness from the bananas.
You know I love finishing touches so I like to place a few slices of banana on top.
Because your baking should always look pretty no matter what you are making.
I think this label says it all, this is Bold Banana ice cream.
Beautiful pop him into the freezer and we are going to get started on our next flavor.
So here you go we always save the best for last.
So this next flavor is a Key Lime Pie ice cream.
It is absolutely delicious.
So what do you love about a key lime pie.
The gram cracker crust.
So hear I have some biscuits all broken up.
You can use any kind of plain biscuits you want.
And then just put them into your ice cream base.
Lovely.
Next we got the main ingredient which is limes.
I love any kind of lime desert.
And we are going to take the zest off of these limes.
I love a key lime pie because it is a no big pie.
It has a nice thick crust.
And it has the beautiful nice swishy lime center.
So once you get the zest off I am going to go ahead and cut it in half.
Then take a fork and squeeze out the juice.
For that added extra lime zing.
Everything is in there now you just go ahead and mix it all together.
Look at all the cookie crumbs.
I like big bits and small bit s so you get different texture through your ice cream when
you eat it.
Okay so this is all mixed up and it smells delicious so we are just going to go ahead
and pour it into our container.
Oh yum yum yum yum.
This is absolutely delicious.
Now grate a little bit more zest on top.
And of course sprinkle a few extra cookies on top.
So why mess with perfection this is simply called key lime pie.
Who does not love key lime pie!
Oh this looks so good but I have to freeze him so he has to go into the freezer for a
minimum of four hours and then he is ready to be tasted.
So this is my favorite part you finally get to taste your ice cream.
Go ahead and serve your self a big scoop of ice cream and add as many flavors as you like.
Oh yeah baby.
You know what.
