Today, I am dressed as Ciri from Witcher because I got so many
Requests from you guys to make something from the video game Witcher, so that is exactly what we are gonna be doing today.
I was looking at all the different foods in the game
And I thought we have to make toffee. It's one of the best foods in the game
And I love to eat it.
And we've [never] made it before on Nerdy Nummies, so today is gonna be a first.
It's a nice and simple recipe and I thought it would be perfect
So let's get started!
The things you will need will be
two cups of almond butter, 1 cup of honey, half a cup of agave,
half a teaspoon of vanilla extract
half a teaspoon of almond extract, and a quarter teaspoon of sea salt. You will also need a
candy mold in the shape of small rectangles. Just make sure that it's heat proof.
Now let's put it all together! The first thing that we're going to do in a medium sized sauce pot
We are going to add our honey, agave, vanilla extract, almond extract, and salt.
Then, using a spatula, we are gonna mix rigorously
Until it's well combined
Once your mixture is well combined, we're gonna take this pot and our almond butter over to the stove.
Cook the mixture for 12 minutes, stirring constantly,
Making sure the temperature never goes over 250 degrees.
I'm using a candy thermometer to be accurate.
Adjust the heat as needed. Then, after 12 minutes, add the almond butter all at once and beat the mixture for about 2 minutes on low heat.
The mixture will be ready when it starts to pull away from the pot easily.
My kitchen smells so good right now!
I just took the toffee off of the stove. It's very hot, so please be careful.
Then in front of me I've got a baking sheet lined with a piece of parchment paper and our rectangle candy tray.
You wanna make sure you grease it.
And now we're just gonna scoop our toffee. Push it in there
Then, using this little spatula spread it flat.
There. *sniffs spatuala* Awww yeaahhh..
I think you should make this recipe just to make your house smell good. This is amazing.
After your toffee has set, we're just gonna pop em' out and enjoy.
Just gonna flip my mold upside-down. Badoop!
Put a little pressure.
There we go! First piece of toffee.
Then we're gonna do this for all of our yummy toffee. Pop pop Pop pop Pop pop Pop pop Pop pop!

It is delicious. It's such an easy recipe. If you guys have never made toffee before, I would highly recommend this recipe.
