We have taken 500 grams raw mangoes, let us peel them.
Now let us cut off the pulp from the mangoes.
Cut down these big chunks into small pieces.
Peel and chop down each mango likewise.
We are done with chopping the mangoes let us now prepare the launji.
Heat 2 tbsp oil to the pan.
Oil is rightly hot, add ½ tsp cumin seeds, ½ tsp fenugreek seeds to the oil.
Reduce the flame to prevent the spices from browning.
Add 1 tsp fennel seeds and sauté the spices for a while.
Now add ½ tsp turmeric powder, sauté a little and then add the chopped mango chunks.
Mix everything really well.
Cook the mango chunks along with the spices for a while so that the chunks are nicely coated with the spices.
Now we will add 1 cup of water, ¾ tsp plain salt, 1 tsp black salt, ½ tsp red chili powder and mix thoroughly.
Cover and let it cook for 4 to 5 minutes.
Check later.
We need to cook the mango chunks until they get little tender.

We cooked and checked after 5 minutes first.
The chunks were little less soft.
We covered again and cooked them for another 3 minutes.
Now we will mix jaggery to it.
We have taken 200 grams of jaggery.
Crumble the jaggery into small chunks.
Also add ½ tsp garam masala and mix well.
Cook the launji until jaggery melts completely.
Jaggery has melted completely, now let us let it get a little thick in consistency.
Launji has turned thick and is now ready.
Turn off the flame and transfer the launji to a bowl.
Sweet-tangy raw mango launji is ready and taste super scrumptious.
