We are making eggless mango cake today that too in pressure cooker. This is simple and easy recipe.
Like our regular recipes. In a bowl, take 1/4 cup or 4 tbsp ghee. You can use 1/2 cup soft butter instead of ghee.
Add 1/2 cup powdered sugar. Beat the mixture. Ghee and powdered suagr is nice, fluffy and light. Add 1 cup fine rava.
No need to roast rava. You can use rava as it is. I have pulsed fine rava for 3-4 times in mixer.
To reduce coarse texture of rava. Use fine rava and no need to roast it. Rava and ghee are mixed well.
I have 1 cup mango pulp. I used 2 alphanso mangoes and made it's pulp at home. This is not store bought pulp.
That's why the pulp is thick. Mix pulp with rava mixture. It has got nice colour and awesome arome. Add 1/2 cup water
Mix well again. See the consistency. The mixture is runny now, we will give it resting time. So it will thicken up.
Add 1/2 tsp caerdamom powder, 1/2 tsp baking powder and 1/2 tsp baking soda. Mix well. Cardamom powder gives nice flavour.
Add dry fruits. Keep some dry fruits for garnishing. Cover and rest the mixture for about 30 minutes.
I have rested mango cake batter for 30 minutes. Take a pot that comes with cooker in which we make dal, bhat.
I have greased it with oil and kept a butter paper at the bottom of the pot so that cake won't stick to tin.
Pour out the cake batter into the tin. Spread it evenly. Garnish with dry fruits.
You also can add raisins, saffron if you want. Preheat cooker for 10 minutes.
Put dish that comes with cooker at the base. You can add a little salt or baking soda at base of cooker.
But I haven't added. Put a tin on the dish and put cake tin over it.
Put a lid and bake on medium heat for about 35-40 minutes. I have baked mango cake for exactly 35 minutes.
After 35 minutes, turned off the gas. Gave it a resting time of about 10 minutes.
Kept it covered for 10 minutes. Let's check now. The cake has risen up really good.
Let's take it out. Insert a tooth pick at the centre of the cake then it comes out clean.
Cake batter doesn't stick to it at all. This means the cake is well baked.
Let cake cool down for 10 minutes more. Then we will take it out. I have cooled cake for 10 minutes.
Losen up the sides of cake with knife. So that it will come out of the tin easily.
Put a dish on the tin and flip the tin over. Wow.. Take off the wax paper. Wow..
Oil greasing have left some spots on cake. Nothing else. It is nice and spongy.
The cake is moist too. It is looking just yumm. Let's cut it into slices.
I must taste it. It has got nice taste of mango. It is nice, soft and moist.
The dry fruits in it are just awesome. This is very easy, simple and quick recipe.
