Let's see how to make urad papad today. I am heating 1 1/2 cup water in a sauce pan.
1 1/2 cups means I am using US cup measurement here. If you don't have US measurement cup,
Then you can use katori or bowl for measurement. In water, add salt to taste, 1 tbsp papad khar,
And 1/2 tsp hing. Mix well. Bring this mixture to boil. Papad khar must be dissolved in water.
Water is boiling and papad khar is nicely dissolved. Let the water cool down. To make papad we need black pepper powder.
I have taken 1 tsp black pepper in morter. I am not blending in blender. It is blended into fine powder in blender.
We need to maintain the wholeness of pepper. Crush pepper coarse. Try to use morter.
Black pepper powder is already. Take 3 cups urad dal flour.
Add black pepper powder and mix well. You can add cumin seeds if you want.
Stir the previously made papad khar water. Add it to the flour and make thick dough.
Do not make soft dough as you make for chapati. Knead thick dough. This flour is a little sticky.
It sticks to hands. 1 1/4 cups water is enough for 3 cups flour. I have kept 1 1/4 sups water in sauce pan.
We can use this later. Thick dough is ready. It is too sticky. You can use dry flour. About 1/2 cup extra flour is needed.
You can clean this all. You can use a little oil if you want while kneading the dough.
Take a little dry flour and clean your hand and the dish. Knead the dough once again.
I have removed the stickyness a little. Use a little water at the intervals while kneading.
This is a little tedious process. Being urad dal flour, it sticks a lot to hand. We want thick dough.
Not soft dough at all. Add 1 tsp oil and knead again for about a minute again.
Make uniform dough by adding oil. Transfer dough into a bowl and rest it at least over night.
If you don't have that much time, rest it for at least 2-3 hours. I have rested papad dough for 3 hours.
Let's check now. It is a little soft. You can pound this flour in morter. Or what I do,
I take that much flour that fits in my hand. Brush a little oil to hand and stretch flour with hands. Like so.
So that it becomes soft and uniform. Stretch the flour really good. The more you stretch, the better papad will be.
This is a little hard work process. Hard work is involved. If you want to skip this step, transfer the flour into food processor,
And blend or pulse it. Stretch it nicely. The more you stretch, more nice lati can be made.
And papad also can be nicely rolled. We need to stretch for about 7-8 minutes. After stretching for 7-8 minutes,
Then let's make lati ot boti from this. Stretch this and make it smooth in elongated shape.
I have stretched this uniformly. Take a knife and make lati or boti from this. Like so.
You can make bigger or smaller lati as you want. It is not compulsory to follow this process only.
But this gives nice softness or smoothness to flour. It becomes easier to roll papad.
Take all lati into a bowl. Cover and keep aside. Follow the same process with remaining flour.
Here some lati are already. Nice colour. Let's roll papad now. You can use dry flour if you want.
But if you have kneaded flour really good, then you don't need to use dry flour or oil at all.
The flour should be thick and the more you stretch, the more nice consistency it will have.
Roll papad nice and thin. First papad is rolled. It is nice and thin.
The more thin it is, more nice it will look. And it tastes nice after roasting too.
You can see. Spread all the rolled papad on a cotton cloth. You can sundry them.
Flip over after 2-3 hours under hot sun and dry from other side as well. It's shape should not change.
Papad shrinks as it dries. If you see it's edges shrinking, flip it over and dry from other side.
I have rolled all the papad. I have kept them for drying. It takes atleast 1 day for this process.
When these dry comletely, we will roast and fry these and see how these are turned out.
I have dried papad nicely. These are really good. Let's roast now.
Papad is nicely roasted. You can roast this papad in microwave too.
