Let's see how to make long grain basamati or akhkha basamati today.
Generally there is lot of confusion while cooking this rice. At times it is not properly cooked or is is cooked too soft.
Let's see how to cook this rice perfectly means long grains will be there and also will not be too sticky or more separted.
We are not making rice in cooker. We will cook rice separaet in pan. Take 1 cup long grain basamati rice into a bowl.
We call it as akhkha basamati too. It is easily available in market. You can use rice of any brand.
Wash this rice really good under water for 3-4 times. I have washed rice 2-3 times nicely. Soak in water for about 30 minutes.
I have soaked 1 cup rice for 30 minutes. I have drained all the water in it. Take out the drained rice into a pan.
Add 1 1/2 times water in this rice as we have soaked this rice for 30 minutes. So it has already absrobed water.
Add 1 cup first and 1/2 cup more water. Add salt to taste. Add a little or 1/2 tsp ghee.
Ghee gives nice flavour to rice and it doesn't become sticky. Turn on the gas and bring it to boil on high heat.
Use broad pot or pan for cooking rice. If you use deep pan, then rice gets pressed in it.
And it becomes sticky. It doesn't become separated. Rice has begun to nicely boil. Turn the gas to medium heat.
Medium heat means 130 Deg C on my induction. Cook on medium heat until water in absorbed.

You can see, almost all the water in getting absorbed. Rice has soaked almost all the water.
At this point of time, reduce the heat to 80 Deg C. Cook the rice on lowest heat for another 15 minutes.

I have cooked rice on lowest heat for 10 minutes. Turn off the gas and let it be like that for 5 more minutes.
Give it resting time of 5 minutes. 5 minutes are over. Let's check now. You can see, rice is nicely cooked.
Separate it with the help of fork. Do not mix much. Make it fluffy carefully.
Take out rice into a dish so that you can see it. Nice long grains and this rice is nicely cooked. Doesn't become dry.
