
my kitchen as I make these delicious beef empanadas.

I've made empanadas a handful of times. They can take a little time to make but
they are well worth it. I'm going to show you how I make my beef empanadas.
There are a lot of recipes out there but basically you make them with what
ingredients you have and spices you like. So let's get started. In a pan on medium
heat I'm adding in about a pound of ground beef, cooking, stirring and
chopping until browned and in fine pieces. I also drained off some of the
excess fat. Now I'm adding in some finely diced onions and bell peppers. Cooking
and stirring for another couple minutes.
Adding in some minced garlic, salt and black pepper. Cooking and stirring for
another minute. In goes some sliced Spanish olives and tomato sauce.
Giving that a good stir.
Next are the spices. I have some adobo seasoning, onion powder, paprika, chili
powder, cilantro, oregano and cumin. Giving that a good stir and cooking for a
minute then removing from the heat and letting it slightly cool. yYu can add the
seasonings that you like.
I'm using Goya empanada dough discs tonight. You can use the brand that you
like or make your own. These are good and convenient. I'm placing in a good spoonfull
of my cooled meat mixture. You don't want to make these too full as you want
a nice edge to get a good seal. Folding over the dough and pressing down on the edge.
Then I'm taking a fork and pressing down along the edge and I'm doing this
on both sides to make sure I have them sealed tight. If your fork tends to stick
to the dough you can dip the fork and flour.

In my pan I have some vegetable oil heated to about 350 degrees.
I'm carefully putting in a couple empanadas. You don't want to overcrowd your pan.
These will take about three to four minutes to cook, just a couple minutes on
each side. I gently turn them over a couple times to get an even browning.
You're going to see some small bubbles form on the dough. Once they are golden
brown they are done. Remove and place them on a wire rack to drain.
These meat pies or beef empanadas are so rich and good. The pastry dough is nice
and crispy and the little pockets are packed full of
flavor and goodness. This recipe made ten empanadas. You can serve them as an
appetizer, meal or a snack. I hope you give these empanadas a try
make them your own with the meat vegetables and spices that you like.
