
So, let's begin with the papdi.
So, here I have taken 1 cup wheat flour.
1/3 cup of amaranth flour.
Salt according to taste.
A little bit of red chilly powder and 2 tbsp oil.
To this we'll add water and knead it nicely.
Our dough is ready, we'll keep it aside for 10 minutes.
Until then, we'll prepare the sweet chutney.
For the sweet chutney, I have taken 1 cup of dates.
The seeds have been removed, half cup jaggery.
1/4th cup of tamarind.
To this I'll 1 cup of water and boil it in the cooker until 2 whistles.
Now, till this gets boiled, we'll prepare our puri.
We've used a shortcut to make many puri from 1 big roti.
Making individual puri takes a lot of time.
Now, this is done and we will cut out the puri..
..using a cutter, or a bottle cap, or a round container.
We'll prick these as we need them to be crispy.
Pricking them would stop them from rising.
Now, we'll lightly grease the baking tray.
Now, we'll place the puri upside down.
Not on the side where we pricked them.
We'll place them on the opposite side.
Now, I'll prick them on the other side as well.
You can grease the puri on top, if you wish.
I have pre-heated the oven at 150 degrees.
Now, we'll bake the puri for 5 minutes.
The mixture for chutney has boiled and cooled down.
Now, we'll pour it in the mixer.
Add the water if you need to.
Now, we'll filter it.
Now, we'll add salt to it.
A bit of red chilly powder.
1/2 spoon cumin powder.
Mix it nicely.
Our sweet chutney is ready.
5 minutes are over, now we'll take the tray out.
Now, we'll flip the puris and bake them for another 5 minutes.
5 minutes are over and we'll take the puris out.
We'll add 3/4th spoon raw sugar in the curd for our papdi chaat.
A little bit of red chilly powder.
And a little bit of black salt.
Mix them nicely.
Let's assemble our papdi chaat.
We'll add some steamed potato over it.
We'll some boiled white chickpeas, over it.
Now we'll nicely spread the curd we made.
Coriander and mint chutney.
The sweet chutney we prepared.
A little bit of chaat masala.
And some chopped coriander.
Our papdi chaat is ready, we baked the papdi which is usually fried.
So eat as much as you want.
