
Welcome to Ruchkar Mejwani with Archana.
When we talk about raw mangoes we either make instant pickle..
..or we make Aam Panha (Raw Mango Pulp).
But, today I am going to show you 'Kairi Rice' (Raw Mango Rice).
Let's heat the oil.
We will take 4 tablespoon oil.
The oil is hot.
Now, we will add 1 tablespoon mustard seeds.
Next, add 10-12 curry leaves.
3 red chillies...I have taken dry chillies.
1 tablespoon split chickpeas.
1 tablespoon urad dal (split black lentils).
Half tablespoon turmeric.
Give it a mix.
Once the lentils turn red in color, we will add length wise sliced onion.
Some coriander leaves...
Now, let the onion cook.
Let's add salt as per taste.
Now, let's wait for 5 minutes until the onion turns soft.
The onion has turned softer, now we will be adding grated raw mango in it.
I have taken 2 raw mangoes here.
Give it a mix.
The onion has turned soft.
Now, we will be adding cooked rice.
We have taken 4 cups of cooked rice.
Let's mix it now.
To make the cooked rice what you can do is...
If you take 4 cups rice you need 8 cups of water.
Add some salt.
Let the water boil. Then add the rinsed rice in it.
And, let it cook almost all the way through.
Then, strain the excess water.
Let's check whether the rice is ready.
The rice is ready!
Let's serve it now.
And now on this we will add finely chopped raw mango.
And add some coriander leaves on it.
Our 'Kairi Rice' is ready!
